Hinrik Örn Lárusson is an Icelandic chef, entrepreneur, and owner of Lux Veitingar (catering service), one of Iceland's leading catering and hospitality companies. He was named Icelandic Chef of the Year 2024 and won the Northern European qualifying round of the Global Chefs Challenge 2025, earning the chance to represent Iceland on the world stage. A former member of the Icelandic National Culinary Team, he is known for combining premium Icelandic ingredients with modern Nordic and international influences. In London, he brings a contemporary interpretation of Icelandic cuisine.

Darby's Owner & Chef

Robin Gill brings a signature approach built around direct relationships with farmers and a larder built from the ground up through fermentation, curing and pickling. Dublin-born, he trained at Le Manoir, Don Alfonso 1890 and Noma before opening the Dairy in Clapham, the restaurant that established him as a leading voice in London's produce-led dining. Today he is chef and owner of Darby's, his Irish-inflected restaurant, bar and bakery in Embassy Gardens.

Darby's is Robin Gill's Irish-inflected restaurant, bar and bakery in London's Embassy Gardens, named after his jazz-musician father, Earl "Darby" Gill. The kitchen works closely with farms, butchering and ageing meat in-house and cooking large cuts over fire, while the bakery turns out sourdough from British heritage grains. With an oyster bar, live music and a generous, sharing-led menu, Darby's brings together the things Gill's father loved most: good food, good music, and good company.
