The Menu
The four-course prix-fixe menu is $95 per guest and includes:
1st course
Lightly smoked Arctic char, dill vinaigrette, kohlrabi & Icelandic wasabi
2nd course
Slowly cooked cod, roasted cauliflower, soy & champagne sauce
3rd course
Icelandic filet of lamb, potato puree, glazed carrot, crowberry sauce
4th course
Icelandic Provisions skyr & blueberries, skyr sorbet, bilberry granite & white chocolate

Meet the chefs
Matt Baker
Under 101 Hospitality restaurant group, Matt Baker owns and operates Gravitas, a New American fine dining establishment in Washington D.C.’s Ivy City neighborhood, Baker’s Daughter, a café and market with three locations in the Nation’s Capital and Michele's, a uniquely American dining experience at the Eaton DC in downtown Washington that reflects the chef's upbringing among the international flavors of Houston and New Orleans.
What sets Chef Matt apart from others in his field is his consistent passion for cuisine, hospitality, and all things indulgent. His obsession started at an early age. Growing up in Houston, Chef Matt and his family would scour all corners of the city in search of traditional Tex-Mex and fresh tortillas, travel miles for the best new BBQ spot, taste, explore, and fall in love with the vibrant and diverse ethnic food scene, so ubiquitous in this southern town. During semi-annual trips to Detroit, he was always the first of his cousins to assist his grandma with preparing cookies and pies for holiday celebrations. This led to an enthusiastic enrollment at Johnson & Wales University in Miami.
Viktor Örn Andrésson
Viktor is one of Iceland's most prestigious culinary experts. A member of the Icelandic National Culinary team from 2009 to 2015, he has received many awards depicting the extent of his talent. Notably, he was named the Iceland Chef of the Year in 2013 and Nordic Chef of the Year in 2014 and won two gold medals at the Culinary World Cup in Luxembourg in 2014.
Most recently, Chef Viktor Örn Andrésson led the Iceland team to a bronze medal in the prestigious Bocuse d'Or 2017 Finale and earned special recognition for preparing the best fish of the Bocuse d'Or 2016 competition.
Hinrik Örn Lárusson
Despite his young age, Hinrik Örn is one of the most talented chefs in Iceland, winning the Junior Chef of the Year 2017 competition and landing silver on Nordic Chef Junior in 2018. He was Viktor Arnar's assistant at the Bocuse d’Or competition in 2017, where they won a bronze medal. Hinrik was in the national team of chefs in 2018 - 2019, and in 2018 he won a European competition in cooking.
Hinrik grew up in the business living in a hotel for the first 18 years of his life, where his mother ran a hotel in south Iceland. Hinrik has worked at some of the best restaurants in Iceland. Hinrik owns and operates together with Viktor Lux Restaurant and Sælkerabúðin.
