Icelandic Chefs Viktor Örn Andrésson and Hinrik Örn Lárusson, in partnership with Executive Chef Laura Maxwell, will prepare a four-course tasting menu of Nordic cuisine at the Drake Hotel.

Enjoy an Icelandic Culinary Experience at The Drake Hotel

Hosted daily starting at 5 p.m., from September 22-25 at The Drake Hotel, Icelandic Chefs Viktor Örn Andrésson and Hinrik Örn Lárusson, in partnership with Executive Chef Laura Maxwell, will prepare a four-course tasting menu of Nordic cuisine. Viktor Örn Andrésson and Hinrik Örn are some of Iceland’s most talented chefs, both receiving many prestigious awards, honoring their expertise in the field. Laura Maxwell, a graduate of George Brown’s Culinary Arts Management program, focuses on bringing locally sourced, naturally cultivated, and sustainable ingredients to The Drake Hotel.

Meet the chefs

Viktor Örn Andrésson
Viktor is one of Iceland's most prestigious culinary experts. A member of the Icelandic National Culinary team from 2009 to 2015, he has received many awards depicting the extent of his talent. Notably, he was named the Iceland Chef of the Year in 2013 and Nordic Chef of the Year in 2014 and won two gold medals at the Culinary World Cup in Luxembourg in 2014.

Most recently, Chef Viktor Örn Andrésson led the Iceland team to a bronze medal in the prestigious Bocuse d'Or 2017 Finale and earned special recognition for preparing the best fish for the Bocuse d'Or 2016 competition.

Laura Maxwell
Inspired by Toronto’s dynamic culinary scene and bolstered by her worldly experience, Laura focuses on bringing locally sourced, naturally cultivated, and sustainable ingredients to The Drake Hotel.

A graduate of George Brown’s Culinary Arts Management Program in 2005, Laura obtained additional certification in Italian Culinary Arts. After gaining exposure to new techniques in one of Italy’s richest gastronomic regions - Emilia-Romagna – Laura’s career began at the Four Seasons in Toronto. From there, she held positions across Toronto at Oliver & Bonacini Café and Grill, Biff’s Bistro and Wine Bar, Auberge Du Pommier, and Tundra at the Hilton, respectively. Her last stop at Le Sélect Bistro saw her design and maintain the restaurant’s award-winning menu as their Executive Chef.

Not only was Chef Laura responsible for hiring, leading, and training a team of 25+ employees, she leaned into her philanthropic philosophy, supporting local charities and non-profits at off-site fundraising events whenever possible. Among other organizations close to her heart, Second Harvest, Holland Bloorview Kid’s Rehabilitation Hospital, Mount Sinai Health, Community Food Centres Canada, and Ocean Wise are institutions Laura is proud to have supported and been affiliated with.

Hinrik Örn Lárusson
Despite his young age, Hinrik Örn is one of the most talented chefs in Iceland, winning the Junior Chef of the Year 2017 competition and landing silver for Nordic Chef Junior in 2018. He was Viktor Arnar's assistant at the Bocuse D’or competition in 2017, where they won a bronze medal. Hinrik was on the Icelandic Culinary Team from 2018 - 2019. And in 2018, he won the European competition in cooking. Hinrik grew up in the business, living in a hotel for the first 18 years of his life where his mother ran a Hotel in south Iceland. Hinrik has worked at some of Iceland's best restaurants. Hinrik owns and operates together with Viktor Lux restaurants and Sælkerabúðin.
